Traditional African Mealie Bread

These are delicious muffins made from mielie meal, which is maize meal - a staple in many homes in Africa, and whole corn (sweetcorn, not corn on the cob). It may also be known as corn bread in the rest of the world.
You will need:
125ml maize meal
500 ml self-raising flour
pinch of salt
500ml buttermilk
125ml canola or sunflower oil
250 ml cheddar cheese
410g whole corn kernels
You will need either a 1 x 12 hollows muffin pan or 2 x 6 hollows muffin pan.
Alternatively, use a bread tin and still follow the guidelines below, it may need to be baked for just a little bit longer until done.
To make:
Preheat your oven to 180'C / 350'F / Gas Mark 4
Grease your muffin pan/s
Now mix all the above ingredients together
Make sure the consistency is that of a form a thick batter
Spoon the batter into the prepared muffin pan/s
Bake for 25 to 30 minutes until golden
To make sure its cooked, prick it with a silver crochet needle (tip from my mother) and if it comes out clean....it's done!
This batter makes roughly 12 muffins
Serve it as a side to a roast meal, braai (bbq) or even a wintry soup. This is a very versatile 'dish'. Enjoy!
